BBQ Pork Chops
with parmesan asparagus and bacon-ranch egg noodles


Ingredients:

2) 8 oz. pork loin chops
1) bundle asparagus
12 oz. egg noodles

Method:

Broil pork chops 8 minutes on one side, 4 minutes on other side
Trim ends off asparagus and peel stems, cut in half
Blanch in boiling salted water
Spray pork chops with Memphis BBQ Flavor Spray
Spray asparagus with Butter Flavor Spray and Parmesan Flavor Spray
Spray egg noodles twice with Butter Flavor Spray, once with Bacon Flavor Spray and once with Ranch Flavor Spray

Turkey BLT Wraps

Ingredients:

2) Flour Tortillas
6 oz. lowfat sliced turkey
2 oz. low fat cream cheese
8) slices beef steak tomatoes
Romaine lettuce leaves
Peeled carrot, cut in rounds

Method:

Spread cream cheese over each tortilla
Spray with 1 spray Ranch Flavor Spray and 1 spray Pepper City Flavor Spray
Divide remaining ingredients between each tortilla and spray with Smoked Bacon Flavor Spray and roll up

Asian Poached Salmon Salad (yields 2)

Ingredients:

2 salmon filets skinned & deboned
Romaine lettuce leaves roughly chopped
1 red pepper, julienned
1 carrot, julienned
4 button button mushrooms, cleaned and sliced
1 peeled and segmented orange
(reserve peek and trimmings)
¼ cup peanuts, roughly chopped
½ cup chopped scallions
1 cup celery thinly sliced
4 celery stalks, whole
1 cup orange juice

Method for salmon:

Lay whole celery stalks across the center of a shallow sautee pan
Place orange trimmings and peals around
Place salmon filets on celery and add water and orange juice to cover half way up the sides of the filets
Bring to simmer and poach about 6 mins. Until salmon is medium.

Method for salad:

Toss all remaining ingredients together and divide onto two plates
Spray salad with Ranch Flavor Spray
To finish, place salmon filets on top and spray with Teriyaki Flavor Spray

Hot & Sour Baked Chicken, Butter and Parmesan Corn on the Cob, Whipped Potatoes (yields 2)

Ingredients:

2) chicken breast with skin & bone
2) idaho potatoes, cut in 1/8
2) ears of corn, cut in half
1 cup milk
2) T extra virgin olive oil

Method:

Bake chicken at 400 degrees for approx 20 to 25 minutes until cooked through
Boil potatoes in water and drain
Spray 2 times with Ice Blue Salt Flavor Spray and one
Spray 1 time with Pepper City Flavor Spray
Mash with milk and olive oil
Place corn in salted boiling water and cook about 10 minutes until corn is tender
Spray cooked corn with Ice Blue Salt Flavor Spray

1 spray Butter Flavor Spray

Shrimp w/ Fettucine (yields 2)

Ingredients:

8 large shrimp, peeled and devained
1 cup cherry tomatoes
1 cup zucchini sliced
1 cup yellow squash, sliced
1 cup olive oil
12 oz fettucine, cooked

Method:

Saute shrimp in olive oil about 4 minutes
Add tomatoes and both squash and continue to sauté until tomatoes begin to blister about 2-3 minutes
Add pasta and toss spray with Tomato Basil Flavor Spray
Spray with Parmesan Flavor Spray

Ingredients:

2 cups soymilk
1 cups strawberries cleaned and quartered
½ cups ice

Method:

Spray strawberries 5 times with Mochaccino Flavor Spray and blend with milk and ice until smooth

For each portion spray one slice of angel food cake 4 times with Cookies & Cream Flavor Spray. Top with diced strawberries and spray with Mochaccino Flavor Spray

Eggbeater Frittata for two

Ingredients:

10 inch Teflon pan
12 oz egg beater egg substitute
½ sliced red onion
½ cup lowfat sliced turkey, diced
½ cup chopped red pepper
½ cup frozen spinach, thawed, drained and chopped
½ cup asparagus cut in 1 inch sections
Cooking spray

Method:

Preheat oven to 350 degrees.
Spray pan liberally with cooking spray.
Start by cooking onions over medium heat until translucent.
Add peppers and continue to cook until peppers soften.
Add turkey and asparagus and spray with salt and pepper city.
Pour in Eggbeaters.
Stir with rubber spatulas, making sure ingredients are all evenly distributed.
Bake in oven approx 15 minutes until eggs are set and slightly brown on top.
Slice frittata onto serving plate and slice into six.
